should try quinoa in the pressure cooker again. apparently 3 minutes is a good amount.

I wonder if I can double the recipe for kale soup.

  • There should not be more than 16 cups cooked rice in the Instant Pot and since 1 cup raw makes 3 cups cooked we have to divide the 16 by 3. That makes 5.3 cups.
    The calculation is only theory though. I have not tried that many cups in my own 6-quart. 4 cups raw dry rice are the maximum I have cooked myself without any issues and with perfect results.

I don’t see how the calculus works for kale soup, compared to e.g. some canned veggie soup.

Cycle testing now:

  • 4 cups long grain white rice (
  • 4 cups water
  • 4 cups frozen vegetable medley
  • 2 cups frozen broccoli (Co-op)
  • 1 tablespoon Knorr powdered chicken broth

Cook on Rice setting.

Was a little bit mushy and some of the rice was burned on the bottom. Not bad enough to change though.

Mix in the protein:

Either

  • Chicken breasts
  • 3 cans lentils
  • 3 cans mixed beans medley
  • 4 cans tuna
  • Crushed eggs

Should look into ramens.

Canned lentils are already cooked . Just rinse well and they are ready to use.

The frozen vegetable medley is not pre-cooked.

However, co-op’s frozen broccoli is pre-cooked.

  • Pre-made hash-browns = $2.60
  • 60 tortillas = $4
  • Milk/half and half (on hand usually) = $.50

Total cost 29.35, .49 per burrito!

Wonder if there’s a way I can use frozen spinach here. the trick is that defrosting frozen veggies just takes so long…

Any canned veggies that would be a replacment for Romaine and would go well on wraps?

The great thing about meals like the chicken wraps is that they don’t need to be heated and I don’t feel self-concious eat them anywhere - I’ve just gone outside to a park bench near work (so I can run over).

tried the stovetop quinoa recipe with

  • add 5 cups water, lid on pot
  • add 3 cups frozen broccoli, wait for return to boil
  • add 3 cups quinoa
  • 0.5 cups cheap oilve oil
  • 1 cup lemon juice
  • set to 700 W
  • timer for 12 mins (builtin)
  • Turn off, timer for 15 mins

Mix. Need a bigger pot to be able to mix properly, needed to use mixing bowl.

Added the 6-bean mix, but lentils would also be good.

Not enough green.

A little bit too wet, probably from the frozen broc. Could have used less water.

Want to try with frozen spinach sometime.

Just a little bit too much lemon juice, I think. Maybe 3/4 cup would be better.

Containers are too small. Want rubbermaid 8 cup rectangular takealongs.
